I don't agree with the fact that u address only people u have formal relationships with as 'dear' though.
I e-mail many friend and relatives all over the globe ,and even my sisters and husband also when he's away are addressed as dear---as in dear sis or dear Aunt so and so.
Hi so and so is a bit too abrupt for my liking
Maybe its a hangover from my schooldays in India,where the medium of instruction is English but its not really our 'mother tongue'(sic)
Informal letters to begin with 'Dear' is dunned into our heads from an early age and it still goes on  as my 8 year old daughter is going through that stage.</description>
